This is the Italian way to make fried chicken.

  • 3 Tbs. olive oil
  • 4 Tbs. lemon juice
  • 1/4 tsp. salt
  • 1/8 tsp. pepper
  • 2 tsp. chopped parsley
  • 3.5-lb. frying chicken, cut into pieces
  • 2 C. flour
  • 1 egg, lightly beaten
  • 1 1/2 C. olive oil for frying

Make a marinade of oil, lemon juice, salt, pepper and parsley. Pour over chicken in a casserole and let stand for about 2 hours. Turn occasionally. After 2 hours, take chicken out of marinade. Dry well. Flour thoroughly and dip into beaten egg. Fry in deep olive oil for about 15 minutes.
