If you love yams then try this recipe and make them fried. This sure is tasty!

  • 4 medium yam, peeled and cut into 1 inch slices
  • 4 C. water
  • Salt to taste
  • 4 Tbs. butter or margarine
  • 2 Tbs. sugar

Soak sliced yam in water with salt for 30 minutes. Remove from water, drain and pat dry. Melt butter in large heavy skillet until bubbly. Add yam; brown quickly on both sides. Sprinkle with sugar; stir gently to coat both sides. Cover, reduce to low heat, and simmer for 15 to 20 minutes or until fork tender.

Makes 4 servings.
