An easy and fast fried zucchini recipe--with just 5 ingredients!

Ingredients

  • 1 small-medium zucchini
  • 1 C. bread crumbs
  • 1 egg
  • 2 Tbs. milk
  • vegetable oil

Directions

Wash zucchini and cut off ends. Slice into 1/8th-inch slices and set aside. Heat 1-2 inches of oil in a heavy pan. Whisk egg and milk together until bubbles form and place in a shallow bowl. Put bread crumbs in a separate shallow bowl. Coat zucchini in egg, then bread crumbs. Fry 4-6 zucchini slices at a time, turn to brown both sides. Fry 3-4 minutes on each side, until golden brown and tender. If zucchini is browning too fast or oil is too hot, add more oil. Drain well on a paper towel. Serve with marinara sauce if desired.
