Let's face it, the best way to serve vegetables to your guests is to fry them. Try this quick and easy fried zucchini recipe with some mayo and lemon juice on the side!

  • 2 large zucchinis
  • 1/2 C. flour
  • 1/2 C. cornstarch
  • 1/2 tsp. salt
  • 1 C. water
  • 1 egg
  • 2 C. breadcrumbs
  • 1/2 C. pecorino, grated
  • Salt and pepper to taste
  • Oil for frying

Whisk flour, cornstarch, salt, water, and egg together in a bowl. In a separate bowl, combine breadcrumbs and pecorino. Slice zucchinis about 1/4 inches thick. Dip slices in batter, then coat in breadcrumbs mixture. In a pot of heated oil, fry coated slices about 3 minutes per side, or until golden brown. Drain on paper towels and season with salt and pepper. Serve with mayonnaise and lemon juice.
