Frosted Lemon Cookies

The refreshing flavor of lemon inspires this delightfully crisp and tender cookie. At only 80 calories and 3 grams of fat per cookie you won't feel guilty splurging on this wonderful spring time cookies.

Ingredients

  • 2 1/2 C. all-purpose flour
  • 1 1/2 C. sugar
  • 1 C. Land 'O Lakes Unsalted Butter, softened
  • 2 eggs
  • 1 Tbs. freshly grated lemon peel
  • 1 Tbs. lemon juice
  • 1 1/2 tsp. cream of tartar
  • 1 tsp. baking soda
  • 1/4 tsp. salt
  • Glaze:
  • 2 1/2 C. powdered sugar
  • 1/4 C. lemon juice

Directions

Heat oven to 400ºF. Combine all cookie ingredients in large bowl. Beat at low speed, scraping bowl often, until well mixed. Drop dough by rounded tsp.fuls, 2 inches apart, onto un-greased cookie sheets. Bake for 6 to 8 minutes or until edges are lightly browned. Meanwhile, combine all glaze ingredients in small bowl; stir until smooth. Frost warm cookies with glaze. Sprinkle with additional lemon peel, if desired.
