This is an easy yogurt parfait recipe with ultra healthy chia seeds infused in the yogurt. With healthy ingredients and fresh fruit this makes a perfect breakfast on the go. Garnished and layered with granola and fruit providing a delightful crunch in each bite. Can be prepared the night before and enjoyed whenever.

  • 2 C. coconut milk
  • 2 C. plain Greek yogurt
  • 2 T. clove honey
  • ¼ tsp. vanilla extract
  • ½ C. whole Chia seeds
  • 1 C. All natural granola
  • ½ C. fresh blueberries
  • ½ C. fresh strawberries

In a bowl, mix the milk, half the Greek yogurt, vanilla extract and honey. Carefully stir in half the chia seeds; mix well with a spoon and refrigerate for 20 minutes, stirring occasionally. When the mixture is of a thick gel like consistency, divide it evenly between four tumbler-sized glasses. Add ¼ cup of granola into each glass on top of the mixture followed by the fresh fruit. Spoon the other half of Greek yogurt evenly between the glasses, placing the yogurt on top of the blueberries and strawberries. Garnish the top with blueberries and strawberries to each glass, and sprinkle the remaining chia seeds on top. Serve Immediately.
