These mini, sticky tartlets are a real treat. Impress your guests with some fruit and nuts mixed with gooey caramel, all in a flaky crust.

Ingredients

  • 8 tartlet cups
  • 210 g. granulated sugar
  • 4 T. double cream
  • 1/4 C. butter
  • 2 C. dried cranberries
  • 2 C. almonds, chopped
  • 2 C. walnuts, chopped

Directions

Add nuts and dried fruit to a bowl and mix well. Set aside. To make the caramel. put the sugar in a heavy based pan with four tablespoons of water. Only stir once, before putting this onto the heat. Then bring to the boil, until it turns a golden caramel color. Do not stir. As soon as it turns golden brown remove the pan from the heat and add the cream. Stir once the cream is added and then add butter and continue to stir. Once this has cooled slightly, add to fruit and nuts mixture.
Divide the filling between the tartlets and chill them in the fridge for 30 mins before serving.
