  • 1 stick butter
  • ¾ cup packed brown sugar
  • 2/3 cup flour
  • 1 ½ cup rolled oats
  • ½ cup chopped dried apricots
  • ½ cup dried cranberries
  • ½ cup chopped walnuts
  • ½ teaspoon salt
  • 1 teaspoon vanilla
  • ½ teaspoon baking soda
  • 1 egg
  • 1 teaspoon vanilla

Preheat the oven to 375 degrees F. Cream the butter with the brown sugar in a large bowl before beating in the egg. Dissolve the baking soda in 1 tablespoon warm water and then beat it into the butter bowl with the flour, salt, and vanilla. Stir in the oats, apricots, and cranberries. Add the nuts and mix well. Drop tablespoons of the dough onto greased baking sheets and press down the dough to flatten them. Bake for 10 minutes.
