Fruit Cake Cookies

We make these every year. Yummy! These fruit cake cookies are very moist and colorful with excellent taste. Perfect for gift giving or sharing with friends. Recipe yields about 150 cookies. Stores well.

Ingredients

  • 1 lb. candied cherries
  • 1 lb. candied pineapple
  • 1 lb. chopped dates
  • 14 oz. bag angel coconut flakes
  • 4 C. chopped pecans
  • 3 C. plain flour
  • 1/2 tsp. baking soda
  • 1/2 tsp. salt
  • 1/2 C. butter
  • 1 1/2 C. sugar
  • 2 tsp. vanilla flavoring
  • 2 tsp. cinnamon
  • 3 lg. eggs, well-beaten

Directions

Chop fruit into small pieces. Leave pecans in halves or chop lightly. Mix together with fruit in a medium bowl, set aside. In a separate bowl, sift together flour, baking soda and salt. Pour approximately 1/2 C. over fruit and nut mixture. Cream butter and sugar until light, add beaten eggs and mix well. Add vanilla and cinnamon and stir in remaining flour, mixing well. Stir in fruit and coconut. Drop by tablespoonful onto a greased cookie sheet. Bake at 300 degrees for 20-25 minutes.
