I’ve made these muffins many times and I can say that they definitely give you the boost you need in the morning. Baked to a soft, moist texture and filled with fruit and dried oats, these muffins are just yummy and serve as the perfect grab and go breakfast. Make these the night before and freeze them to last you all week!

  • 1 ¼ C all purpose flour
  • ½ C packed brown sugar
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ½ tsp cinnamon powder
  • 1 C rolled oats
  • ¼ C dried blueberries
  • ¼ C dried strawberries
  • 3 Tbs olive oil
  • 1 egg
  • ¼ C milk
  • ½ tsp salt

Preheat the oven to 400 F.

Lightly grease a 12-cup muffin pan with some butter and set aside.

In a bowl, mix together the flour, brown sugar, baking soda, baking powder, cinnamon, and salt. Mix well and then add in the oats, dried strawberries and blueberries.
Then, slowly and gradually stir in the eggs, oil and milk until a batter is formed.

Once the batter is ready, fill the muffin cups with ¼ C of batter. Bake for 20-25 minutes. At the end, insert a toothpick in the middle and if it comes out clean, remove. If not, add on an additional 5-10 minutes and check again.

Remove and serve warm or keep and serve at room temperature later. Enjoy!
