Fruit Muffins

For a tasty protein boost, spread these with part-skim ricotta cheese.

Ingredients

  • 1 C. all-purpose flour
  • 1/2 C. whole wheat pastry flour
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1 egg
  • 1/3 C. 2% milk
  • 1/3 C. fat-free plain yogurt
  • 2 Tbs. canola oil
  • 1/3 C. + 2 Tbs. sugar
  • 1 C. peeled and chopped fresh fruit, or fresh berries
  • Pinch of ground cinnamon

Directions

Preheat oven to 350°F. Lightly coat 12-C. muffin pan with cooking spray. In large bowl, combine flours, baking powder, and salt. In medium bowl, combine egg, milk, yogurt, and oil. Add 1/3 C. sugar, and mix well. Pour egg mixture into dry ingredients, and stir until all ingredients are moistened. Add fruit, and stir until just mixed. Place ¼ C. batter in each muffin C., and bake 15 to 20 minutes, or until muffins are golden and wooden pick inserted in center comes out clean. To prepare topping, mix together cinnamon and 2 Tbs. sugar. Sprinkle ½ tsp. over each warm muffin. Cool, and remove from pan.

Makes 12 muffins
