Fruit Salsa with Cinnamon Sugar Chips

This is a very refreshing treat with totally unexpected flavor.

Ingredients

  • 2 Granny Smith apples, peeled and chopped
  • 8 oz. fresh strawberries, chopped
  • 3 kiwis, peeled and chopped
  • 2 Tbs. apricot jam
  • 2 Tbs. brown sugar
  • 1 pkg. tortillas, cut into triangles
  • cinnamon and sugar

Directions

Mix fruit, jam and brown sugar together and chill. Cut tortillas into triangles (I like to use a pizza cutter) and place on baking sheet. Spray with cooking spray and sprinkle with cinnamon and sugar. Bake in the oven at 350 degrees for 10 minutes. Cool on wire rack and serve with fruit salsa.

To make the salsa a little spicy, just add a bit of chopped jalapeno pepper.
