Ingredients

  • 240g dried cranberries
  • 140g dried apricots
  • 140g sultanas
  • 180g cut mixed peel
  • 115ml brandy
  • 225g butter
  • 1 cup (250g) caster sugar
  • 4 large eggs
  • 1/4 tsp. orange essence
  • 2 tsp. baking powder
  • 3 1/2 cups (425g) plain flour
  • 1 tsp. salt
  • 225ml orange juice

Directions

Preheat oven to 160 degrees F. Grease two cooking pans. Mixed together cranberries with brandy. Beat together with butter and sugar and add in eggs. Using a separate bowl, mix together the powder, flour, salt and orange juice. Stir in the cranberry mixture. Bake in the oven for 90 minutes. Brush over icing mixture on top of the cake.
