Fruity Curry Chicken Salad

Textures are all mixed up along with flavors of raisins, red grapes, apples, celery and pecans in this curry chicken salad recipe. This would go great on a croissant or in a honey pita.

  • 4 skinless, boneless chicken breast halves - cooked and diced
  • 1 stalk celery, diced
  • 4 green onions, chopped
  • 1 Golden Delicious apple - peeled, cored and diced
  • 1/3 C. golden raisins
  • 1/3 C. seedless green grapes, halved
  • 1/2 C. chopped toasted pecans
  • 1/8 tsp. ground black pepper
  • 1/2 tsp. curry powder
  • 3/4 C. light mayonnaise

In a large bowl combine the chicken, celery, onion, apple, raisins, grapes, pecans, pepper, curry powder and mayonnaise. Mix all together. It is better served if you wait a day so all the flavors can mix together.

Yield: 8 Servings.
