Ingredients

  • 2 Tbs. orange marmalade
  • 1 Tbs/ grape seed oil
  • 2 Tbs. balsamic vinegar
  • 1/2 pinch salt
  • 2 grinds pepper
  • 4 C. baby spinach
  • 1 medium mango, sliced
  • 2 large strawberries, sliced
  • 2 Tbs. flax seeds, toasted

Directions

Combine orange marmalade, grape seed oil, balsamic vinegar and salt and pepper in a small bowl. Whisk to combine ingredients.

Toss one half the dressing with the spinach.  Place half the spinach on a salad plate. Arrange half the mango in a circle on top of the spinach, and then place one sliced strawberry on in the middle.

Sprinkle with flax seeds and drizzle with remaining dressing if desired.
