  • 2 C. cooked pork, shredded
  • 4 C. mixed greens
  • 2 apples of choice, peeled, cored, and sliced
  • 2 nectarines, cut into wedges
  • 2 avocados, cut into wedges
  • 1 pt. cherry tomatoes, halved
  • 1 T. salad oil
  • 2 T. slivered almonds
  • salt and pepper
  • 2 T. balsamic vinegar
  • 2 T. honey
  • 1/2 T. dijon mustard
  • 2 T. mayonnaise
  • 1 tsp. chili powder
  • 1 tsp. black pepper
  • 1/4 C. salad oil

In a large bowl, toss together pork, mixed greens, apples, nectarines, avocados, cherry tomatoes, one tablespoon of salad oil, almonds, salt, and pepper. In a blender, combine all remaining ingredients to create your salad dressing. Pour on top of the salad mixture and gently toss to combine. Season with salt and pepper to taste.
