These bars are like rice crispy treats but even better! These bars are topped with indulgent chocolate and filled with gooey marshmallows.

  • 3/4 cup butter
  • 1 1/2 cups of sugar
  • 3 eggs
  • 1 teaspoon of vanilla extract
  • 1 1/3 cups of all-purpose flour
  • 1/2 teaspoon of baking powder
  • 1/2 teaspoon of salt
  • 2 cups of miniature marshmallows
  • 1 1/3 cups semisweet chocolate chips
  • 3 tablespoons butter
  • 2 cups crisp rice cereal

Preheat oven to 350 degrees.
In a mixing bowl, add butter, sugar, eggs and vanilla and beat until the mixture is fluffy.
Combine the flour, baking powder, salt and add it to the creamed mixture. Spread the mixture in a greased jelly roll pan and bake the mixture for 15-18 minutes.
Sprinkle the marshmallows evenly over the cake, then return it to the oven for 2-3 minutes. Using a knife dipped in water, spread the melted marshmallows evenly over the cake. Then let the cake cool.
For the topping, combine the chocolate chips and butter in a small saucepan. Cook over low heat, stirring constantly, until everything is melted and well blended. Remove the topping from the heat and stir in the cereal. Spread the chocolate over the bars. Then let the bars chill and then serve!
