  • Salad:
  • 1 Tbsp. olive oil
  • 2 boneless, skinless chicken breasts
  • 1 bag mixed greens
  • 1 quarter of a white onion, sliced
  • 2 C. thin apple slices
  • 1 C. pecans
  • 1/2 C. crumbled cheese
  • Balsamic:
  • 1/2 C. olive oil
  • 1/4 C. white balsamic vinegar
  • 3 Tbsp. honey
  • 1/2 tsp. sea salt
  • 1/4 tsp. black pepper
  • 1/8 tsp. garlic powder

Preheat the oven to 350 degrees. Brush the chicken breasts with oil and season with salt and pepper. Place on a baking sheet and cook 20 minutes until the internal temperature is 160 degrees. Let the chicken cool 10 minutes before slicing. Toss the rest of the salad ingredients together in a large bowl. Make the vinaigrette by mixing the ingredients until well combined. Toss the chicken in with the salad and drizzle with vinaigrette before serving.
