Fun Mini Apple Pies

- 2 C. flour
- 2/3 C. butter, chilled
- 1 tsp. salt
- 4 Tbs. water
- 5 medium apples, peeled and chopped small
- 3/4 C. sugar
- 2 tsp. cinnamon
- 6 Tbs. flour
- 2 Tbs. butter, chilled
Preheat the oven to 425 degrees.
For the crust, blend together the flour, salt, and butter until it looks like small peas. Add in the water and blend until it starts to just stick. Take out the dough and combine by hand until well blended. Roll the dough out on a lightly floured surface until it's about 1/4 in. thick.
Cut the dough into 12 4-in. circles. You will need to roll out the dough twice. Use the remaining crust to decorate the top of the pies however you'd like. Press each circle of dough into an ungreased muffin tin. Press the dough up the sides to form little bowls.
In a bowl, mix the filling ingredients with a spoon until well combined. Spoon the mixture into the muffin bowls. Cut up the butter into 12 pieces and place a piece in the middle of each bowl. Top with any dough you'd like.
Bake for 16 to 18 minutes, or until the crust is light brown and the apples are bubbling. Let cool before gently removing the pies from the tray.
