  • 1 eggplant, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 large sweet onion, chopped
  • 3 large ripe tomatoes, chopped
  • 2 (14 oz.) cans Garbanzo beans(14 oz.), drained and rinsed
  • 1 (14 oz). can Artichoke hearts, drained and quartered
  • 1 Tbs. fresh oregano
  • Salt and pepper to taste
  • 1 pkg. egg noodles, cooked
