- 2 C. frozen green garbanzo beans
- 2 tsp. salt
- 1/2 C. small mozzarella balls
- 1/4 C. diced red onion
- 1/2 tsp. minced garlic or jarred crushed garlic
- 1/4 C. vinaigrette of your choosing
Cook garbanzo beans in salted water and drain. Combine all vegetables in a bowl. Pour vinaigrette over salad, add mozzarella, and toss gently. Garnish with fresh basil.
