If you've never tried green garbanzo beans, now's the time!

  • 2 C. frozen green garbanzo beans
  • 2 tsp. salt
  • 1/2 C. small mozzarella balls
  • 1/4 C. diced red onion
  • 1/2 tsp. minced garlic or jarred crushed garlic
  • 1/4 C. vinaigrette of your choosing

Cook garbanzo beans in salted water and drain.  Combine all vegetables in a bowl.  Pour vinaigrette over salad, add mozzarella, and toss gently.  Garnish with fresh basil.
