Garden Cheese Ball

This combination of Neufchatel and Cheddar cheese with plenty of garden veggies is sure to please.

Ingredients

  • 1 C. shredded carrot
  • 1/2 C. shredded zucchini
  • 1/2 C. shredded yellow squash
  • 1 (8-oz.) pkg. Neufchatel cheese, softened
  • 1 C. shredded Cheddar Cheese
  • 1 Tbs. grated onion
  • 1 clove garlic, minced
  • 1/3 C. nut-like cereal nuggets (like Grapenuts)
  • 1 Tbs. chopped fresh parsley

Directions

Press veggies between paper towels to remove excess moisture. Combine cheeses, grated onion, and garlic in a large bowl; stir well. Stir in shredded veggies. Cover and chill at least 2 hours. Shape chilled cheese mixture into a ball. Combine cereal nuggets and parsley, stirring well. Coat cheese ball with cereal mixture. Wrap in waxed paper and chill thoroughly. Serve with crackers.

Yield: 3 C.
