  • 1 C. sliced yellow and green zucchini
  • 1 C. sliced mushrooms
  • ½ C. goat cheese
  • 6 eggs

Beat together the eggs and season with salt and pepper. In a heavy skillet, saute the mushrooms until tender, then pour the eggs into the skillet. Top with the zucchini and crumble goat cheese on top. Once the edges of the egg begin to set, place the skillet into the oven, heated to 400 degrees, and bake for 8 minutes.
