This is seriously one of the best dishes, it’s bursting with flavor from the arugula and sunflower seeds, but still, so easy to make.

  • 2 C. arugula, chopped
  • 1 C. baby spinach
  • 1 cucumber, thinly sliced lengthwise
  • 1 (15 oz.) can cannellini beans, drained
  • 3 Tbs. toasted sunflower seeds
  • Lemon vinaigrette
  • 2 Tbs. lemon juice
  • ¼ C. extra virgin olive oil
  • 1 tsp. Dijon mustard
  • ‘½ tsp. garlic, minced
  • ½ tsp. salt
  • Pepper to taste

Boil the beans in water for 3-5 minutes and drain. Whisk all of the lemon vinaigrette ingredients together and set aside. Combine the salad ingredients and toss them in some of the lemon vinaigrette (up to your taste).
