Garden Road Salsa

This garden road salsa is a mixture of corn, beans and peppers. It makes for a healthy appetizer or veggie side dish. Once you start eating it, you won't be able to stop!

  • 1 sm. can white corn, drained
  • 1 15-oz. can black beans, drained
  • 1 15-oz. can small pinto beans, drained
  • 1 yellow pepper, chopped
  • 1 red pepper, chopped
  • 1 green pepper, chopped
  • 1 med. onion, chopped
  • 1/2 C. vegetable oil
  • 1/2 C. sugar
  • 1/3 C. vinegar
  • 1 pkg. tortilla chips or cups

Combine oil, vinegar, and sugar in saucepan. Bring to a boil to melt the sugar. Remove from heat and cool. Combine all the veggie ingredients and pour cooled sauce over veggies. Refrigerate or serve at room temperature with tortilla chips or cups.
