Rice, vegetables, marinara sauce and cheese layer to make a casserole so good you might not have leftovers! It's got something for everyone, and you can use any combination of vegetables you have available!

  • Roughly 1 C. of the following:
  • green beans, chopped
  • zucchini, sliced
  • broccoli, chopped
  • cauliflower, chopped
  • carrot, sliced
  • spinach, chopped
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 2 C. cooked rice, seasoned to taste
  • 2 C. cheddar cheese, grated
  • 3 C. marinara sauce

Prep all the vegetables while a large pot of salted water comes to a boil. 
Add broccoli, carrot, cauliflower, green beans, and zucchini. Cook for about 7 minutes or until slightly tender.
Preheat the oven to 350° F.
Spread rice evenly in a 9x13 baking pan.
Spread vegetables over the rice.
Pour marinara over casserole evenly.
Cover with foil and bake for about 30 minutes.
Remove the foil and top with cheese.
Return to over, uncovered, for about 5 minutes or until cheese is melted.
