Garden Vegetable Soup

This is a great soup to make any time of the year. It is as delicious as it looks and so quick and easy to make. While cooking, I happened to be experimenting, when my children were small, to make a new dish that would taste great, they would love and would be very economical to make with a large family to feed. I soon found out that not only the children loved it, but all of the grownups did as well.

Ingredients

  • 1 lb. ground beef
  • 1/2 C. chopped onion
  • 1 pkg. Cheeseburger Macaroni Hamburger Helper
  • 5 C. water
  • 1/4 tsp. both salt and pepper
  • 1 14.5-oz. can whole tomatoes
  • 1 15-oz. can tomato sauce
  • 1 15-oz. can Veg-All mixed vegetables
  • 2 Tbs. parsley flakes

Directions

Brown ground beef and onion in Dutch oven, drain. Stir in Hamburger Helper sauce mix, water, salt, pepper, tomato sauce and tomatoes, with liquid, breaking up the tomatoes. Heat to boiling, stirring often. Reduce heat, cover and simmer, stirring often, for about 10-15 minutes. Stir in Hamburger Helper macaroni (I add some extra macaroni) and veg-all mixed vegetables, with liquid. Cover and cook, stirring often, until macaroni is tender (about 10-15 minutes longer). Stir in parsley flakes. Serve with bread, rolls or biscuits.
