Garden Veggie Casserole

You may use any variety of your favorite vegetables for this garden veggie casserole recipe and this may be frozen for later use as well. Very easy and tasty!

Ingredients

  • 1 1/2 C. chopped zucchini
  • 1 C. chopped yellow summer squash
  • 1 C. chopped tomato
  • 1 med. chopped onion
  • 1/3 C. grated parmesan cheese
  • 1 C. shredded mozzarella cheese
  • 1 1/2 C. milk
  • 3/4 C. baking mix
  • 3 whole eggs
  • 3/4 tsp. salt
  • 1/2 tsp. pepper

Directions

Heat oven to 400 degrees. Lightly grease 13x9-inch baking dish. Sprinkle zucchini, yellow squash, tomato, onion and cheeses evenly in baking dish. Beat remaining ingredients in blender at high speed for 15 seconds or with a hand beater for 1 minute or until smooth. Pour evenly in dish. Bake 35-40 minutes or until knife inserted in center comes out clean. Let stand 5 minutes before cutting.
