This veggie sandwich is bursting with garden bounty and great flavor!

Ingredients

  • 1 C. cooked brown rice
  • 1 C. each (chopped): tomato, zucchini, yellow squash, bell pepper
  • 1/2 tsp. each: garlic powder, dried oregano, lime juice
  • 2 Tbs. balsamic vinegar
  • dash hot pepper sauce
  • 4 (8-in.) fat free tortillas, warmed

Directions

Preheat broiler. Spread veggies out on a cookie tray and broil until veggies are browned- about 12-15 minutes. Combine veggies with rice, seasonings, vinegar and pepper sauce. Spoon 1 C. of the filling down the center of each tortilla and roll up. Enjoy!!
