Garden Wrap
Ingredients
- 1 C. cooked brown rice
- 1 C. each (chopped): tomato, zucchini, yellow squash, bell pepper
- 1/2 tsp. each: garlic powder, dried oregano, lime juice
- 2 Tbs. balsamic vinegar
- dash hot pepper sauce
- 4 (8-in.) fat free tortillas, warmed
Directions
Preheat broiler. Spread veggies out on a cookie tray and broil until veggies are browned- about 12-15 minutes. Combine veggies with rice, seasonings, vinegar and pepper sauce. Spoon 1 C. of the filling down the center of each tortilla and roll up. Enjoy!!
