Try this delicious roasted chicken recipe for dinner tonight!

  • one 5-7 lb. whole roasting chicken
  • 2 tsp. salt
  • 1 tsp. black pepper
  • one 1-oz. package poultry blend herbs (or just blend rosemary, thyme, and sage)
  • 1 lemon, cut in half
  • 1 bulb garlic, cut in half across cloves
  • 1 Tbs. olive oil

Preheat oven to 425 degrees.  Remove giblets from chicken, rinse inside and outside of chicken, then pat dry with paper towels.  Stuff cavity with 1 teaspoon salt, 1/2 teaspoon pepper, herbs, lemon, and garlic.  Tie legs together with string and fold wings under bird.  Rub olive oil over entire chicken and sprinkle remaining salt and pepper over the top.  Cook for 1 1/2 hours, until juices run clear or thermometer reads 170 degrees.  Remove chicken from heat, cover with foil, and allow to rest for 20 minutes.
