Wash and peel potatoes before cutting to a 1/10 inch thick. Put the potato slices in a bowl of ice cold water mixed with ¼ cup salt. Let the slices sit in the water for 15 minutes before draining the water and patting the slices dry with a paper towel. The dryer the potatoes the crunchier the chips will be.

Over medium high heat, place a large pot halfway filled with frying oil. Combine buttermilk powder, garlic powder, onion powder, and sugar. The ingredients can be grinded in a spice grinder if desired.

Working in batches, fry the potato slices for 2-3 minutes in the oil or until golden brown. Set on a paper towel when the chips are finished cooking.

Toss with salt and spices before the chips are all they way cooled.
