  • ½ stick butter
  • 2 cloves garlic, minced
  • ¼ C. all-purpose flour
  • Salt and pepper to taste
  • 2 C. milk
  • 1 C. cheddar cheese, shredded
  • 6 potatoes, thinly sliced
  • ½ C. onion, diced
  • 1 T. parsley

Preheat oven to 350 degrees. In a saucepan, melt butter and sauté garlic briefly over medium heat. Stir in flour, salt, and pepper. Slowly whisk in milk and bring to a slight boil. Cook for a few minutes as mixture thickens. Remove from heat, stir in cheddar until melted, and add potatoes and onion. Transfer to a greased baking dish, stir in parsley, and bake covered for 1 hour and uncovered for an additional 30 minutes until tender.
