  • 1½ tablespoons cornstarch
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 lb sirloin beef tips, sliced into strips
  • 3 tablespoons vegetable oil
  • 1 lb fresh broccoli
  • 6 garlic cloves, cut into fourths
  • 3 tablespoons soy sauce
  • 1/3 cup water

In a medium pot, bring 1 quart of water to a boil over high heat. Reduce the heat to medium and add the broccoli to the water, simmering for about 3 minutes. Remove broccoli and let drip in a strainer. In a bowl, mix together the cornstarch, salt, pepper and beef until well coated. Heat 2 tablespoons of the oil in a wok or large pan and heat until hot and stir-fry the beef for about 1 minute, or until cooked through. With a slotted spoon, transfer the beef to a bowl and loosely cover with plastic wrap and keep warm. Add a tablespoon of oil to the wok. Add the broccoli and garlic and stir-fry over high heat for 2 minutes, or until broccoli is tender. Add soy sauce and water and bring to a boil. Return meat to skillet and cook for 2 minutes, or until sauce thickened.
