Garlic Cheese Rigatoni

This recipe culminated when my husband and I needed a quick side dish with some fish and I had quite a selection of just a little bit of several cheeses to use up in the fridge - but we both loved it. This recipe is enough to serve 4 people as a side dish...or you could turn it into a main dish by adding some grilled chicken or shrimp!

  • 1 C. rigatoni noodles
  • 1/2 C. milk
  • 1/2 oz. Colby Jack cheese, shredded
  • 1/2 oz. mozzarella cheese, shredded
  • 1 slice, prepackaged cheese slices (i.e. Kraft)
  • 1 Tbs. minced garlic

Cook noodles as directed on package in a medium saucepan. Drain noodles. Transfer noodles back to the saucepan. Add cheeses and garlic to noodles and cook over low heat. Stir constantly until melted and blended well.
