Ingredients

  • 2 boneless chicken breasts, cut into bite-sized chunks
  • 4 cloves of minced garlic
  • 2 tablespoons of lemon juice
  • 3 tablespoons of olive oil
  • ¼ cup of black olives, halved
  • ¼ cup of spinach
  • ¼ cup of lettuce
  • ¼ cup of feta cheese
  • cucumber slices
  • 1 small red onion, sliced
  • tzatziki sauce
  • 4 slices of warm pita bread
  • salt and pepper

Directions

In a small bowl, whisk garlic, lemon juice, olive oil and salt and pepper together. Pour over chicken chunks in a bigger bowl; toss and marinate for 15 minutes.
Put 5 pieces of chicken onto each skewer and grill on a grill pan over medium-high heat, turning over as needed, until cooked through (about 15 minutes) and crispy to desire.
On each piece of warm pita, assemble each wrap by layering spinach and lettuce on the bottom, them cucumbers, cheese, chicken skewers, then red onion and black olives. Sprinkle with salt and pepper, to taste and serve with tzatziki sauce!
