These little potatoes are a terrific side for any occasion. Enjoy tender bites that have been brushed with garlic butter and baked to perfection. Top with cheese or bacon for more flavor!

  • 6-8 red potatoes
  • 4-6 cloves garlic, minced
  • ½ stick butter, melted
  • 2 T. olive oil
  • Salt and pepper to taste
  • ½ C. sour cream
  • 2 T. finely chopped chives
  • ½ tsp. garlic powder

Preheat oven to 400 degrees. Take potatoes and make 10 to 12 parallel slits in each about ¾ of the way through (not cutting completely through). In a small bowl, combine melted butter, garlic, and olive oil. Brush and evenly coat potatoes with mixture and season with salt and pepper. Place on greased baking sheet and bake for 1 hour until tops are crispy. In a bowl, combine sour cream, chives, and garlic powder; top potatoes with sour cream and your favorite fixings.
