  • 7 lb New York Strip Roast
  • 7 cloves of garlic
  • 3 tbsp fresh thyme leaves
  • 2 tbsp fresh rosemary leaves
  • 10 fresh sage leaves
  • ⅓ cup of olive oil
  • 1½ tbsp salt
  • 1 tbsp cracked black pepper

Process garlic and herbs in food processor until ingredients form paste. Remove blade from food processor, add salt, oil, and pepper. Rub paste all over beef making sure to get top bottom and sides. Wrap beef in butcher paper and seal overnight. Let beef thaw 1 hour before cooking the next day. Preheat oven 450 degrees. Set beef onto roasting rack in roasting pan. Place roasting pan in oven and cook for 20 minutes. Reduce heat to 350 and cook until internal temperature is 127 degrees at least. Remove meat and let rest tented with aluminum foil for 15-20 minutes. Slice and serve.
