  • 2 Tbs. olive oil
  • 1 1/2 lb. lamb or beef roast, trimmed and cubed
  • 4 garlic cloves, minced
  • 2 carrots, roughly chopped
  • 2 celery stalks, roughly chopped
  • 1 lg. white oniondiced
  • 3/4 cup beef broth
  • 1/2 cup Chardonnay
  • 1/4 teaspoon salt
  • 1 14.5 oz. can diced tomatoes
  • 2 Tbs. fresh basil, chopped
  • 2 Tbs. fresh Rosemary, chopped
  • 2 Tbs. fresh thyme, chopped
  • 2 tablespoon grated lemon zest

Heat the oil in a large nonstick saucepan over medium-high heat. Add the beef or lamb and sear for approximately five minutes a side. Transfer the meat to a plate and covere with aluminum foil. 

Add the veggies and saute over medium heat. Cook until tender, about 8 minutes. Return the meat to the pan and stir. Add the broth, wine, salt and tomatoes and bring to a boil. Be careful as the wine may splatter when added to the heat. reduce the heat and cook covered for another 20 minutes. Remove from the heat and stir in the fresh herbs and lemon zest.
