  • 1 whole chicken, (at least 3 lb)
  • 6 garlic cloves, minced
  • 2 T. melted butter
  • Salt and pepper to taste

Rise the chicken well and pat dry with paper towels. Carefully lift of the skin of the chicken, separating the skin from the meat, and stuff the garlic in between. Do this over the entire chicken, spreading out each garlic clove so it is evenly covered. Use the butter to baste the outside of the chicken, then season with salt and pepper. Prepare a roasting pan with a loose fitting piece of foil, then place the chicken into it, breast face down, and roast for 25 minutes at 450 degrees. After 25 minutes, take the chicken out and carefully flip it, baste with the juices surrounding it, then continue to roast for another 25 minutes. Increase the oven to 500 degrees, and roast until the skin is crisp and golden. Allow the chicken to rest, covered, for 20 minutes before carving.
