  • 8 bone-in, skin-on chicken thighs
  • 1 T. smoked paprika
  • Kosher salt and freshly ground black pepper to taste
  • 3 T. unsalted butter, divided
  • 3 cloves garlic, minced
  • 1 C. chicken broth
  • 1/2 C. heavy cream
  • 1/4 C. freshly grated Parmesan
  • Juice of 1 lemon
  • 1 tsp. dried thyme
  • 2 C. baby spinach, chopped

Preheat your oven to 400°F. Season the chicken thighs with paprika, salt, and pepper. In a large ovenproof skillet, melt 2 T. of butter over medium heat. Add chicken, skin-side down. Sear both sides until golden brown. Drain excess fat and set aside. Melt remaining butter in the skillet and add garlic. Stir constantly until fragrant. Add chicken broth, heavy cream, Parmesan, lemon juice, and thyme. Stir and bring to a boil. Reduce heat and stir in spinach. Simmer until spinach has wilted and sauce has thickened. Add chicken back to the skillet. Place skillet in oven and roast for 30 minutes. Serve immediately
