Your catch of the day was a fresh salmon. What are you going to do with the salmon? You are now going to grill the salmon with lime and garlic. This tasty recipe can be served with a fresh batch of avocado tomato salsa.

  • For the salmon:
  • 2 salmon filets, rinsed and patted dry
  • 4 tbsp of olive oil
  • 2 garlic cloves, minced
  • 1 lime, juiced + lime zest
  • ¼ cup of fresh cilantro, minced
  • 1 jalapeno pepper, seeded and chopped
  • Sea salt and freshly ground black pepper
  • For the Salsa:
  • 3 medium tomatoes, diced
  • ½ cup of chopped red onion
  • 2 ripe avocadoes, cored and diced
  • 2 tablespoons of olive oil
  • juice of 1 lime
  • 1 clove of minced garlic
  • salt and pepper, to taste

First, preheat the oven to 425 degrees F.
Place the salmon fillets on a foil-lined baking sheet.
In the blender or food processor, combine the lime zest, lime juice, cilantro, chopped jalapeno, garlic, and olive oil and pulse until well-combined into a sauce. Then, brush the salmon fillets with the garlic-lime sauce.
Bake the salmon filets for about 12-15 minutes, or until cooked through and flaky.
While the salmon is baking, grab 1 large bowl and 1 smaller bowl for the salsa. In the small bowl, combine the olive oil, lime juice, minced garlic, salt and pepper and mix until well-blended.
In the large bowl, combine the diced tomatoes and avocadoes.
Pour the garlic-lime dressing into the larger bowl and mix until well combined.
Serve the salsa along side the baked salmon fillets and enjoy!
