  • 4 lb. whole chicken, giblets removed
  • 1 head garlic
  • 6 sprigs thyme
  • 1 red onion, sliced
  • 1 lb. potatoes, peeled and quartered
  • 1/3 C. plus 3 T. olive oil, divided
  • 4 T. butter, sliced
  • 1 lemon, sliced
  • salt and pepper to taste

Preheat your oven to 475°F. Season the cavity of the chicken with salt and pepper. Stuff with thyme sprigs. Remove the flaky skin from the head of garlic and slice the top off, exposing the cloves. Rub with three tablespoons of olive oil and stuff into the cavity of your chicken. Tie the legs closed with kitchen string and transfer to a large cast iron skillet. Arrange the potatoes, lemon slices, and red onion around the chicken. Drizzle the entire skillet with remaining olive oil and generously season with salt and pepper. Place the butter slices on top of the chicken and roast for 25 minutes. Reduce to 400°F and roast for another 45 minutes, or until the meat thermometer reads 160°F from the thickest part of the chicken thigh. Let stand for 15 minutes before serving.
