Garlic Mashed Potatoes

Ingredients
- 1 1/4 lbs. all-purpose potatoes
- salt
- pepper
- 1/4 C. olive oil
- 1 lg. garlic clove, chopped
- 1 Tbs. chopped parsley
Directions
Peel potatoes and cut them in quarters. Put the potatoes in a medium saucepan with cold water to cover and salt to taste. Cover and bring to a simmer. Cook 15 minutes or until potatoes are tender when pierced with a knife. Drain potatoes. Dry pan. Add 2 Tbs. oil and the garlic and cook over medium heat for 1 minute. Add potatoes and parsley to the pan. Mash the potatoes with a fork. Stir them well and blend with the parsley and garlic. Add the rest of the oil and salt and pepper to taste. Serve.
