  • 1 C. bread crumbs
  • 3 lb. ground beef
  • 1/3 C. parsley
  • 3 eggs
  • 3 cloves garlic, minced
  • Salt and pepper to taste
  • Olive oil
  • Mozzarella cubes
  • Marinara sauce
  • Provolone slices
  • Sub rolls

In a large bowl, whisk together milk, bread crumbs, parsley, eggs, garlic, salt, and pepper. Add in ground beef and combine with your hands. Form into balls, inserting a mozzarella cube into each. Heat ½ inch of oil in a skillet and cook meatballs for about 1 to 2 minutes on each side until cooked through. Transfer onto paper towels to drain grease. In a clean skillet, pour in marinara sauce, add meatballs, cover, and simmer for 30 minutes. Finish cooking uncovered for an additional 10 minutes and assemble sandwiches!
