  • 6 russet potatoes
  • 12 ounces chopped mushrooms
  • 2 chopped green onions
  • 3 ounces cream cheese
  • 1/3 cup sour cream
  • 5 tablespoons butter
  • 1 ¼ cups grated cheddar cheese
  • 2 chopped garlic cloves

Pierce each potato multiple times with a fork and then bake in the oven for 1 hour at 375 degrees. Melt 1 tablespoon of butter over medium heat and add the mushrooms. Sauté the mushrooms for 6 minutes and stir frequently. Add the onions and garlic and cook for another minute. Remove the veggies from the heat and set aside. Cut each potato in half lengthwise and scoop the flesh of the potato into a large mixing bowl. Add the cream cheese, remaining butter, and sour cream to the bowl. Mash everything together and then mix in the mushroom combination. Mix in ½ cup cheddar cheese. Fill the potato skins with this mixture and top each with more cheese. Put the potatoes on a baking sheet and bake for 25 minutes.
