  • 1 T. vegetable oil
  • 2 C. mushrooms, sliced
  • 2 cloves garlic, minced
  • 1 (10 oz.) can cream of mushroom soup
  • 2/3 C. milk
  • Salt and pepper to taste
  • 3 C. white rice, cooked
  • 1 C. cheddar cheese, shredded

Preheat oven to 350 degrees. In a skillet, heat oil and sauté mushrooms and garlic until fragrant and mushrooms are lightly browned. Transfer into a large bowl and combine with chicken, cream of mushroom soup, milk, salt, pepper, and rice. Pour into a greased baking dish, top with cheddar cheese, and bake for 30 minutes until heated through.
