Ingredients

  • 5 garlic cloves, chopped
  • 1 lb. whole wheat spaghetti
  • 1 pt. grape tomatoes
  • 3 Tbs. extra virgin olive oil
  • 1/2 tsp. red pepper flakes
  • 1/4 C. chicken broth, low sodium
  • 1/4 C. Parmesan cheese
  • 2 C. fresh chopped spinach

Directions

In a large pot of boiling, salted water, cook the spaghetti for 8 minutes or until al dente. Drain spaghetti and set aside. Preheat oven to 400 degrees. Spray a baking sheet with cooking spray and then place the grape tomatoes on the baking sheet. Spray tomatoes with cooking spray and season with salt and pepper, and then bake for 15 minutes. Remove from oven and set roasted tomatoes aside.


In a large saute pan, heat the olive oil over medium low heat and add the chopped garlic and red pepper flakes. Cook for 3-4 minutes. Add the chicken broth and cook for 1 more minute. Add the pasta and toss, so all the pasta is coated in the sauce. Add the spinach, roasted tomatoes, and parmesan and toss with pasta. Then serve.
