  • 4 large potatoes
  • ¼ cup olive oil
  • 3 ½ minced garlic cloves
  • ½ teaspoon dried thyme
  • ¼ teaspoon salt
  • ¼ cup grated parmesan cheese
  • ¼ cup chopped parsley

Cut the potatoes into 1/4 –inch strips and preheat the oven to 425 degrees F. Put the potato slices in a bowl, drizzle with olive oil, and season with the thyme and garlic. Toss the fries to coat them and arrange them in a single layer on a baking sheet. Bake for 30 minutes, but after 15 minutes flip the fries. Return the fries to the bowl, add the remaining olive oil, and sprinkle with parsley and ½ cup cheese. Toss and spread back on the baking sheet. Bake for 10 minutes. Sprinkle with the rest of the cheese and salt and serve.
