  • 6 potatoes
  • 3 slices bacon, chopped
  • 1 oz. roasted potato seasoning
  • 1 C. sour cream
  • 1/3 C. water
  • 1 C. mild cheddar cheese, shredded and divided
  • 1 C. garlic parmesan crackers, crushed
  • 1/2 stick butter, melted

Preheat oven to 400 degrees F. Peel potatoes if desired. Chop potatoes into small cubes. In a greased 9-inch deep casserole dish, add potatoes, bacon and seasoning with sour cream and stir into potatoes. And 1/3 C. water, cover and bake for 30 to 35 minutes or until potatoes are fork tender. Stir in 1/2 C. of cheese. Mix crackers and the other 1/2 C. cheese together and spread over potatoes. Drizzle with butter and put back into oven uncovered and bake 5 to 10 minutes.
