This garlic pasta salad is amazing and makes for a great side dish. It’s packed with veggies and carbs! Balance at it’s best.

  • 15 oz. ricotta cheese
  • 1 head of garlic, minced
  • 1 lb. pasta shells
  • 1 pt. cherry tomatoes, sliced
  • ½ T. olive oil
  • ¼ C. grated parmesan
  • 3 C. baby spinach
  • Salt
  • Pepper

Start off by cutting the top of the garlic head. Drizzle the olive oil over the top and microwave it for 2 minutes. Set aside. Cook the pasta shells as instructed on the package. Squeeze out the garlic cloves and place them into a bowl. Add in the remaining ingredients. Mix well. Drain the pasta. Combine the mixture and pasta shells. Enjoy!
